Balsamic Tomato Bruschetta (Serves 2)

Prep time - 10 mins
Cook time - 5 mins

Ingredients:
  • 3 large tomatoes on the vine
  • 1 tbsp. garlic olive oil
  • 3 tbsp. balsamic vinegar
  • Handful of fresh basil leaves
  • Crusty bread (I like seeded ciabatta)  
  • Low fat garlic butter/spread
First pre heat the oven. Cut the tomatoes into small cubes making sure to only use the flesh (throw out the inside stuff ,seeds etc.)and put into a bowl. Chop or tear the basil into small bits and mix through the tomatoes. Add the oil and balsamic vinegar to the bowl and make sure it coats everything nicely. Spread the crusty bread thinly with the garlic butter and pop in the oven until the butter melts and the bread starts to go golden on the edges. Then top the garlic bread with the tomato salsa, drizzle a little balsamic over the whole thing and enjoy!




Easy Tomato pasta sauce

Prep time - 10 mins
Cook time - 20 mins

Ingredients:
  • 1 small onion finely chopped
  • 1 tsp olive oil
  • 500g cherry tomatoes halved
  • Basil fresh or dried
  • 1 Clove of Garlic
  • Tablespoon Red Wine Vinegar
  • Pinch of sugar
Heat the oil in a pan and then add the onions, cook until they start to go golden then add the tomatoes, red wine vinegar and sugar and leave simmering for 15 mins. Then blend into a nice smooth sauce and serve. It's that easy!
